They're not chinese, they're japanese. And while some people may view this as a way of enforcing a stereotype, you have to remember that most animes are directed towards japanese audiences. As such, imo, this was, likely, just an inside joke referencing a stereotype found in japanese history and culture as a way of showing just how relieved they were to have finished the tests. Think of it as a way of highlighting the seting, while making fun of the mentioned stereotype
