  • Thank you so much for this recipe, Chef John. I made it as a Valentine's Day dinner for my husband and it turned out absolutely delicious!!! I couldn't find dried currants so I ended up using regular raisins instead. I soaked then in water, then drained them and let them air dry before cutting them in half so they wouldn't be too big or hard. Worked great! And it ended up taking about 50 minutes for the internal temperature to reach 165 degrees instead of 30 minutes, but it came out with a love

  • Another great success. I used diced shitake mushrooms instead of the currants and it came out tasting incredible. I put my wired probe thermometer to work during baking and it took exactly 34 minutes to get to 165.
