I made these today and they were fabulous.......I used Pineapple juice for a spritz.......only thing i will do is add more cheese........lots of the cheese melts out of the sides. there was cheese in it but I like lots of cheese so next time I will add more......BUT thank you so much for posting this would have never tried this if it wasn't for seeing this on your site.

would everyone wuit smashing the hell out of their chicken breasts. you go through all that trouble to make an excellent meal and ruin it with destroyed breasts. you are already taking the time to make the food, slow the hell down and wait for it to cook properly you don't have to beat the shit flat. it will cook nicely when it is supple it just might take a couple extra minutes, it's terrible that some people call themselves chefs

Thanks! Made these on my Weber indirect for 1hr 45 min.I used half a chimney of plain Kingsford and half Hickory. Kept lid on whole time. At half time added a couple brickets and spun grate 180 keeping the 3 CCDB over the empty center. I'll be moving from the county with cows outside my window to a condo area with like 10000 units. Doing this I have to give up my big double barrel smoker that I've used for years. I've smoked 40 inch strippers on it to huge Boston butts.Which has me looking for

To much cheese flavor will just taint what flavor there is, dont over power the flavors balance them out, the first taste to hit the buds is the smoke followed by the meal its self. nice vid btw
It was a tad bland and I can't figure out why given the recipe :-S. Mine didn't ooze cheese like your video (actually I hardly noticed it). Next time I think I'll add more cheese and go spicy with jalapinos or sweet with brown sugar. Thanks for the recipe though!
Great job. I do a similar recipe but soak the chicken in terayake and fill it with monterey jack cheeze, jalaepsnos and onioins. It's caled Corona Chicken, I actually got the idea from that anthony bordaine travel show.
I always struggle with rolling them up, love your teqnique of laying out the bacon.
Next time please show someone eating it and their reaction.... It just helps to feel like we got to eat a piece that way... LOL Looks awesome and I think I'll try making it without the smoker cuz I don't have one. :)

Mine certainly was not bland by any means. The beacon and cheese plus the smoke is all the flavor that is needed.
If the cheese didn't ooze, either you didn't have the temperature right, or you didn't use enough smoking pucks.
I've done this recipe 4 times and every time it has been a success.
Sorry yours didn't turn out as good as expected.

The 1st. time I made these, I served one per person, which is WAY TOO MUCH. 1/2 is more than one can eat at a time, it's very rich and filling.

If I were to do it that way, I would probably bake it @ 375 degrees for about an hour.
