  • mmm i love lemon pie with a cuppa tea ;)

  • @IGCentertainmentca Thanks for your nice comment!

    --Betty :)

  • Well thanks for your prompt feedback. Once again my vegetarianism stopped me from enjoying something ,:(

  • @supermacsfanclub Many recipes can be converted by making a few substitutions in the ingredients.

    --Betty :)

  • @supermacsfanclub

Betty's right. Often times you can find Kosher "jello" substitutes that do not have animal based ingredients.

  • Is the Jello required? I cannot eat jello since I am a vegetarian

  • @supermacsfanclub Actually, this pie requires Jello. You might find a lemon pie that doesn't.

  • this looks great, I'm always looking for light recipes. I plan to try this, this weekend. Thank you for sharing

  • @MJINMYHRT I hope you enjoyed the lemon pie!

    --Betty :)

  • Yesterday I prepared this pie and I'll just tell you one word: gone! Everybody loved it and they look forward to eating it again! :D

  • @babygirl1992ray Thanks for your sweet feedback! I really appreciate it!

  • BOY YOU LOVE YOUR KROGER DON'T YOU?!

  • Is there a way to make this for those of us that can have sugar and fat? I'd like to try it.

  • @kareemtiheed You will see the complete recipe if you click the down arrow or "more" near the video. I listed several substitutions to lower the fat and sugar. I think you can use fat free and sugar free ingredients for everything there. For the whipped topping, know you can get fat free or sugar free; I'm not sure you can find both. You might be able to whip some skim milk that has been put in the freezer to form ice crystals, and then sweeten it with artificial sweetener--freeze the pie.-B

  • Have you ever heard of chiffon pie?

  • @SinnFein4ever Yes, we had chiffon pie a lot as I was growing up. We alsways made it from a mix; I need to check and see how it's made from scratch!

    --Betty :)

  • @bettyskitchen

I have a recipee for Tropical Orange Chiffon Pie, if you want it.

  • @SinnFein4ever Sure, that sounds wonderful!

    --Betty :)

  • @bettyskitchen

    Ok.

I can't claim credit for it, as I got it out of a cookbook that my mother gave me as a present two years ago.

I'll type the recipee in right now.

  • @bettyskitchen

Ingredients: 1 TBS plain gelatin, 1/2 cup sugar, 6 oz can of frozen orange concentrate, 1 cup water, 1/8 tsp salt, 1 cup whipping cream, and 1 graham cracker pie crust.

Instructions: Mix gelatin, sugar, salt, and water in a small sauce pan; heat until gelatin dissolves. Stir in concentrated juice. Stirr and chill until mixture mounds when dropped from a spoon. Whip cream and fold into mix. Pour into crust and chill.

  • @SinnFein4ever It sounds delicious! Thanks for the recipe!

    --Betty :)

  • @bettyskitchen

    It was a pleasure!

I made this for dessert while we were on vaction last week, and it was a hit, so I thought you might like it.

If you make it, let me know how it turns out.

Meanwhile, my first attempt at making home-made marshmallows has not turned out well, so I think that I'll be making somthing easier tonight.

    ...Like a pina colada.

    ;)

  • betty i am a diabetic.... this is just perfect..... thank you sooooooooo much... now i can eat something sweet .......thank you

  • Don't you use fresh lemon?

  • @alexanuchid If I have it, I prefer fresh lemon. If not, then reconstituted lemon juice is really good for recipes like this. Thanks for your question!

    --Betty :)

  • Love your recipes! Could you do a lemon meringue pie?

  • @NaturalBeauty321 It is on my list of things to do! I hope to get to it before long.

  • betty...i couldn't find regular yogurt so i had to get the whipped lemon yogurt. i hope it works .

  • @notnormalbuzz Hi, Ben! I hope your pie came out great!

    --Betty :)

  • how long did you let it sit before serving it?

  • Hi Ben! It's nice to hear from you! I have been behind in answering comments lately, but I have not forgotten you! The pie needs to sit in the refrigerator at least 3 hours--overnight is even better. I actually placed mine in the freezer for about a half hour and then the refrigerator for a couple of hours before I cut the pie in slices.

    --Betty :)

  • Hi Betty,

This recipe will come in handy since I just put myself on a diet this morning. Thanks for the video.

  • You are welcome! Good luck with your diet. I think you need to treat youself to foods like this dessert that do not seem like diet food at all! But, you know exactly the ingredients, and that you can eat a reasonable serving with no guilt! Likewise with some salads, soups, broiled fish, meat, and poultry, etc.

    --Betty :)

  • I love this pie. BTW, were Rick and Sully Sullenberger separated at birth? ;o)

  • Thanks for your comment! They do look quite a lot alike!

  • Wow Betty, since I am a lemon lover this sounds so good! I actually saw the corn chowder yesterday and came here to get that recipe but got side-tracked so am back once again. When I saw this Light Lemon Pie I decided to check it out also.

Now I'm starving and can't make up my mind which I want more...lol

Thanks for your lovely comment! I enjoyed reading it! I am glad you are finding some recipes that you like!

  • Betty, this will be great for my grandmother-in-law, who's a diabetic. I have a question, though. Is there any way you can tabulate how many calories, sugars, and fats there are in the entire pie? Then I will be able to divide to figure out how much per serving (depending on how we slice the pie) Thanks!

  • Let me work on that one! I didn't save my containers, so I will have to look on the internet at some specific products or do that the next time I go to the grocery store. The only sugar in the pie is in the crust (if you use artificial sweetener for the 1 1/2 tbps sugar in the recipe, and use sugar-free whipped topping). So, if you leave off the crust, and just serve it as light lemon pudding, it will be perfect for diabetics! I suggest that each person tailor this recipe to meet their needs.

    --B

  • Thank you so much beautiful lady! :D

  • You are so welcome!

    --Betty :)

  • Great idea for my diabetic husband who loves his desserts!

  • Yes, you can *completely* avoid sugar in this recipe if you omit the crust, which has a small amount of sugar. Thanks for your lovely comment!

    --Betty :)

  • Yet another delicious recipe video that's made my day!! I mean that too. One question, and one I've had a long time now, what is whipped topping/cool whip please? I'm from the UK,and I can't think of an equivalent here. Thankyou inadvance for any answers!!

  • Whipped cream.

If you cant get it in the UK, its very easy to make from scratch.

Betty has a recipe for fresh whip cream here in Bettyskitchen, I believe

  • Ah,thankyou very much indeed!! I've learnt something new. :o)

  • Thanks for fielding this question; I had to go into town for a couple of hours. I appreciate your speaking up for me!

    --Betty :)

  • Whipped topping is just sweetened whipped cream. You can whip some whipping cream, and sweeten it with sugar or your choice of artificial sweetener.

    --Betty :)

  • Thanks so much Betty! I feel dumb now for not knowing!!

  • love the new intro...this looks delicious :)

  • I love it, to! Thanks to my Hungarian friends for that! Thanks for your comment on the recipe!
