1 - they have less acceleration(a lot less)

2 - they're a lot more slow during the turns

3 - you don't need that surplus speed to hit the race track since bikes doesn't even reach the top speed at the end of a straight line in a track even thought they're faster on turns and starts even more fast.

So if you tell me they have some more km/h i second you but it's not like they're more performant on track
