@Avi4torMATT He actually does the vast majority of them... I though exactly like you, but then I did a bit of research and found some wiki about "Jackie Chan Stunt Team". Apparently he does have a small number of stunt doubles that make some scenes...

I think this is probably because in his early films he didn't have any doubles and all the stunts were performed by Jackie himself, and he sustained very serious injuries... He may not be fit enough to make all of his stunts anymore.
