I remember. It was probably easier and/or quicker to animate a herd of smaller dinosaurs running around them than Hadrosaurs. The third film kind of gave a nod to the Hadrosaur chase.

Another interesting tidbit. The sound you hear when T-Rex rips into the gallimimus is a recording of Gary Rydstrom's (the sound engineer) Jack Russel Terrier playing with a rope toy.
