  • Hi mama... sooo... the question I have for you is you lowered the heat once you covered it right? I am making this right now as we speak... my problem with rice and beans is... I have always over cooked it leaving it mushy, I never thought to cook out the liquid before covering it...and the whole scoopin and turn technique, I am hoping that my rice will finally come out right!

  • @metallicm hey hun , yes well the reason why you rice is mushy is because ur adding to much water,yes you have to wait until ur rice dries out 1st, but you also have to keep in mind the amount of water used. too much water = mushy rice, not enough water = the rice will be hard and uncooked. for every cup of rice add a cup of water, try adding less water next time.if the rice comes out hard u can always fix it by sprinkling water over it and covering it until is softer. let me know if this helps

  • @y0uarefree yes the whole can is best! depends on how many cups of rice ur making, if ur making 2 or more cups , 1 can of coconut is plenty :)

  • so me and @donna1214 are the same person lol. it turned out great! only thing is i burned the bottom my dummy butt decided to mix the burned part with the rest of the rice so the whole thing tasted burnt. anyway i enjoyed making the food, yeah yeah it's canned beans but i'm in college i don't have time for the "real deal" that ppl complain about lol. i also wanted to let u kno that i've been to the DR myself and it's beautiful! the ppl are so nice and the food is excellent. :)

  • @Mschristiana18 for one can of beans you can make 2 1/2 to 3 cups of rice and the same with water hope it helps:)

  • @Mschristiana18 I made this today, 1 can of beans with 1/2 cup water and the COOKED sofrito, olive oil,1 cube chicken or beef stock and beans. THEN add 1&1/2 cups of rice and 2&1/2 cups of water, boil till the water evaporates, lower the heat, cover and simmer for 20 minutes.

  • I guess instead of cube ...u can use chicken broth...no sazon goya 4 me...main ingrediant msg...all the vegetables for sofrito make it taste good... coconut milk does make rice taste good...but it's better with brown or carolina gold rice...not regular white rice it makes it soupy.

  • I am Dominican and I never heard of someone using coconut milk in our rice dishes. I guess I learned something new. I like the way you displayed your ingreadients at the beginning.

  • Looks very yummy, if you have extra time and wanna make the beans from scratch and use their water you'll get nicer color/ more nutritious. But if your short on time this is a great way to make it :)

  • This recipe is not authentic. The rice is too white because canned beans were used and, as a result, the bean water is not dark enough. The real recipe calls for dry beans to be softened in a pressure cooker. It creates a darker rice, like it's meant to be.

Canned beans have the same taste as any other beans. I should know; I have lived on my own since I was 17 and beans have been a big part of my diet.
