  • Mesquite and Pecan are way different. I have had no luck smoking with pecan. Food always bitter. I have only known 2 people who can smoke with pecan and it was awesome. Mesquite is also a strong flavor and burns really hot. I love mesquite smoke but I also love oak. Emril is right. Hickory is a smoking standard. All bacon and ham at the store is hickory smoked. Mesquite needs to be controlled or it can be overwhelming. Pecan too. I buy mesquite at home depot or lowes, in a 50 pound bag. 12.00

  • In Virginia the woods of choice are white oak and apple. Smoking woods tend to change with regional availability. Any fruit or nut wood is a good smoking wood.

  • how did this guy become famous? I think its just cause he is loud and obnoxiously tries to be funny and entertains his audience, because his cooking honestly sucks. He is sloppy and if you are a trained cook u can notice he makes tons of mistakes on show and just tries to cover them up.
