when i tried to make this dish, i realize my sirloin beef was spoiled, so i sub-ed ground beef, added an egg, and made burger patties instead. they came out awesome - juicy and flavorful. i will definitely make it the right way next time. great explanation on how salty flavors work in vietnamese food.  thank you very much!
