Looks like you did a great job and the ribs look great. My ribs were taking about 6 hours using a smokenator which is a long time for ribs even while doing it low and slow. I called Don who makes the smokenator and he said that the dome temp is 30 % hotter than the grate temp so you ribs were actually cooking at 180 which accounts for the 6 hours - again the ribs look fantastic
@tenphasesgmail The Smokenator is great for a long low n slow! I always plan on at least 6 hours when using it! Gonna do a brisket this summer (finally). That might take 12 hours or so, but that's half the fun!
P.S. If you are using brickets...? do a little research brickets are full of chemicals. :( I'd say those are the most expensive Ribs ever made. Got to be worth more than anything any lawyer has ever done. So let's say $3000 an hr x6 = $18,000 divided by 4 racks that comes to $4500 a rack. YUM :)
In lieu of a couple of floodlights, which were on sale at one of the big hardware stores last week, I just used my car's highbeams! (Only during recording, of course, don't want to kill my battery)!
