I'm little confused, is it divide into two pieces then 1 hour rise then fold, 1 hour rise then fold,

1 hour rise then fold, 1 hours rise then bake (total 4 hour rise and 3 fold) or just three rises and two fold then bake?

ok HOW MANY TIMES DID YOU FOLD THAT?

@sheersoxNC four times total (the top, bottom than the left and right sides) than I let it rest. For me, it's easier to do it this way than wait for 18 hrs. I know it sounds sooo confusing, but it's not once you do it a bunch of times :-)

@TheHeatherhale2007 you can use all purpose flour, it will still make bread...it just won't come out as a perfect ciabatta.

My mum makes Chiabatta often, but it's often quite dense and doesn't have the holes like normal. I think Ill try this recipe sometime. I think it will be great for the beach because I am about to leave for vacation and I can prepare the dough in the morning and hopefully it will be ready by lunch after going out in the boat and sunbathing on the beach.
