  • Hi, are bamboo leaves meant to be bitter? I tried using the bamboo leaves today as a substitute for lotus leaves. After soaking them overnight with boiling water and again in the morning, I notice they are bitter after steaming?

  • These are very different from tamales & taste different as well. Hope you get to enjoy them sometime and taste the difference.

  • The leaves traditionally used are bamboo which can be found dried or frozen in Asian markets. If you can't find them, you can get similar results just using plastic wrap but you won't get the full depth of flavor the leaves impart.

  • You use "sweet rice" or "glutinous rice" which is a very short grain rice used mainly for deserts and snacks. It has a very high starch content which makes the cooked rice naturally sticky. The ingredients you add to make the zongzi depend on if you are making a sweet or savory version.

  • Since glutinous rice is impossible to find in my area, would rolled oats mixed with the rice provide enough stickiness to hold them together?

  • No. Glutinous rice is often labeled as "Sweet Rice" since it is used a lot in Asian deserts. You can find it in many Asian stores or in Chinatown. It's a VERY short grain rice almost like the Italian aborio rice which I suppose you can use if you can't find "sweet rice".
