Hi, are bamboo leaves meant to be bitter? I tried using the bamboo leaves today as a substitute for lotus leaves. After soaking them overnight with boiling water and again in the morning, I notice they are bitter after steaming?
The leaves traditionally used are bamboo which can be found dried or frozen in Asian markets. If you can't find them, you can get similar results just using plastic wrap but you won't get the full depth of flavor the leaves impart.

Since glutinous rice is impossible to find in my area, would rolled oats mixed with the rice provide enough stickiness to hold them together?
