@megatron74 in general when you cook, people recommend using cold water because usually in hot water there are more sediments in the water from water heater and stuff. (but having said that i am sure you won't die if you do it once it a while to make things quicker.) There are certain dishes that you have to cook from cold water for other reasons. In this case, I would say it's more for the sanitary reasons. Does this help?

@cheburashko02 simply put, you are wrong. kimchi has nothing to do with stomach cancer or gastric canger. according to korean medical doctors, the stomach cancer is decreasing in korea due to the use of refrigerators.
You don't need to worry about kimchi getting on your clothes or hair. As long as you don't get it on you, it's not problem. You can also use a fan when cooking, if necessary. But I have cooked as well as been around people who made the dish and there is no smell.
guys i havent laughed this much when im watching a cooking show..you guys are the coolest cooking korean girls i have ever met in my entire life. my kimchi is still being fermented but as soon as its done and gets really sour ill try both of you recipes
