I think your best bet would be to try and "market" the idea to the big pizza chains as a menu item that was not only healthy for the customer, but also highly profitable for the company. Cheese costs skyrocketed last year IIRC ( I remember a friend that owns a few pizza shops complaining about it ) so they'd love a new "fad" style that was cheaper to make. But you'd need a big ad campaign from Dominos or something to get the public aware of the item.

the pizza will taste better without the cheeze. you can avoid the sour milk taste of the pizza if you omit the cheeze.
