He probably remembers the planning stage more than the shooting of each film. He often said that for him the film was basically done by the time production started. Since he always planned for Cary Grant, it makes some sense he'd refer to Grant being in Rear Window.
Who cares if Hitch forgot it was Stewart and not Grant? He created these two really great films. His anecdote on Grant in Lincoln's nostril is great...and instructive.

Your loosing your mind Hitch! Cary Grant was not a photographer and was never in Rear Window. I hope you meant Jimmy Stewart.
