My Curry Paste has Lemon grass in it so I don't add extra. I also like to add, 2 tbls fish sauce, palm sugar, garlic, tumeric, 1 can bamboo shoots, thai chillies, 1 onion, 2 bell pepper, thai basil, 1 lemon juiced and I poach the 2 boneless Chicken breast into 2 cans coconut milk. But there seems to be a 1000 different ways to make this dish. I like a similar dish called "Gang Gai" which is different every where you can find it.

Thanks for sharing this video. I will certainly try to cut the lemon grass. I was told to make a bundle of lemon grass and then remove the bundle.
