Aperture science goes miles underground. you'd be a fool to think that it couldn't go miles horizontally. We know where the parking lot is...above HER room. Consider the walking distance you traveled. It's possible. Besides, the point of the wheat field is in its symbology: open American soil, freedom.

For example when Glados ruled the Aperture science it was far underground but when WHeatley took over he moved the whole labratory further up that is why you were capable of seiing the moon. So my guess is that Glados to ensure Aperture was not discovered she started moving the whole labratory around underground.

Also, Glados's chamber has moved a lot, she rebuilt it in portal 2 far away from the original, then wheatley rebuilt it AGAIN, then glados rebuilt it after you send wheatley into space

If you look at the Portal 2 website, a new comic called Lab Rat shows what happens between portal 1 and 2. It shows that a personality sphere dragged chell back into the Apeture Lab. The comic is not over so stay tuned!
