The term 'cracker' comes form the 'cracking' sound of the whips when the slave masters disciplined the slaves. As a result, black people refer to whites as 'crackers' to mean those who choose to hold us down. As far as 'honky, I'm not sure, but there are tons of racist words for white people that minorities use that people still don't know. Such as, Pale-face, Ofay, Snowflake, Wonder Bread, Ghost, Wop etc.

Honky was, for watever reason, used to describe the dutch, austrian, german, who were the other main white race (apart from the british and the french) who were trying to colonise land in america. You're probably right about the cracker term, but it was also got roots in the British using cracker to describe the irish and scots, since the were known for "cracking" jokes, and since "Craic" is a irish and scots gealic term meaning "fun".
