@vfatnuts to make the controls less twitchy simply use dualrate. with it you can program how much deflection the controls have when full stick movement applied.

ouch, looked like cg wrong and / or elev. neutral position wrong.
did it nose dive when you relax the elevator stick?
maybe more throttle would have helped in stabilizing.
