  • The dinner you prepared looks delicious. However, I'm a bit confused about what you did with the bed of vegetables in your roasting pan. I have used vegetables in a like fashion to roast chicken, turkey, or beef; but after the meat is cooked, I discarded the bed of vegetables before making the gravy.

  • @jngwatson Hello, I like to squish the vegetables with the back of the wooden spoon to get all of their juices out into the gravy and then I discard them, but sometimes I don't squish them and serve them with the meat.

  • I tried the potatoes with coconut oil in a toaster oven by the same method and it worked.

    Why not just coat the potatoes with the fat instead of immersing them?

  • Lol! Yes it's an electric grinder (that one is pepper but I have salt too) - they're really good, and handy when you're cooking too.
