The dinner you prepared looks delicious. However, I'm a bit confused about what you did with the bed of vegetables in your roasting pan. I have used vegetables in a like fashion to roast chicken, turkey, or beef; but after the meat is cooked, I discarded the bed of vegetables before making the gravy.
@jngwatson Hello, I like to squish the vegetables with the back of the wooden spoon to get all of their juices out into the gravy and then I discard them, but sometimes I don't squish them and serve them with the meat.

can you imagine how depressed a poor cow would feel.. knowing it was going to end up like this.... oh the savagery of us humans.. still.... you cant beat a good old roast dinner..mmmm.. nummy

I tried the potatoes with coconut oil in a toaster oven by the same method and it worked.
Why not just coat the potatoes with the fat instead of immersing them?

Lol! Yes it's an electric grinder (that one is pepper but I have salt too) - they're really good, and handy when you're cooking too.
