Dalek's armor is made of Dalekanium, which can prevent anything from peircing it so im geussing the lightsaber would probably just break but if the Jedi was fast enough he could probably cut off the eye stalk and leave the Dalek to rot but the Dalek would most definitely Exterminate the Jedi or self destruct...
