  • That light roux wouldn't make it in my family. That wonderful flavor that comes from the roux doesn't start happening until the roux begans to brown. My Great Grandmother said to "aim" for the color of mahogany. I grew up right on Mobile Bay and teethed on crabs and oysters.

  • First of all, I ain't never seen anybody make a roux in a dinky ass pot like that. Where is the cast iron pot? Also, I like the okra to make mine a little slimy. Cause that's the way it is. These damn yankees don't know how to make gumbo. For me to make a gumbo it take all afternoon from scratch. And as for the seafood or chicken, I like all of it in my gumbo at one time. My favorite is to make gumbo out of a leftover fried turkey carcass from Christmas supper. Then I add sausage, shrimp, etc.

  • okay..that GUMBO LOOKED HORRIBLE...cilantro in a fucking gumbo? I love cilantro but cilantro is emphatically not used in creole/cajun cooking... and that woman is incorrect, I know tons of people who put raw okra in a gumbo..You just have to do nearly at the end and it won't make it slimy. If you boil the okra for hours, THEN OF COURSE IT WILL BE SLIMY...This recipe is an embarassment and an insult to us creoles.

  • I agree with everyone on putting tomatoes in Gumbo. YOU DON'T DO IT. I am from the 8th generation of So. La. and never did my mama or grandma ever put them in there. I am 60 yrs old and make my family Seafood Gumbo often. This stuff he has made is SLOP. :(

  • not tryna be a jacker but do you mind posting a good recipe for gumbo? my great grandmother was from the deep south and never taught anyone in the family how to make it therefore i never tasted it...i'm very very curious of its taste! =]

  • CILANTRO in cajun/creole cooking...Bobby, we are coonass, not mexican...Tomatoes only in creole sauces...I am a chef od 23 years...let me teach you both how to do it right....she was almost on the nose...just not quite...learn to pronounce cajun sausage befor even touching it...and use the whole crab in halves, not just the meat...note to self, never eat bobby flay's food! Take you up om my turkey ,bacon, pepperjack soup anyday!

  • I am a coonass and u do not put tomatoes in a gumbo. period...unless you are from New Orleans. I heard some people from NO put bologna in a gumbo, yuck!

  • Gumbo can go either way. Bobby Flay came to a home state of the original gumbo and challenged a local legend. Of course, the locals may have been used to their own brand of gumbo. But in no way did Bobby Flay used honey in his gumbo! WTF did quacktony was smoking in his homemade pipe? Folks, you make a creole gumbo without rice! It was the original gumbo after all!

  • ahhh, you have to love the false info going around the world about my culture.

    that lady is an idiot. shows like this is why i cringe every time they are cooking cajun or creole food. creoles and cajuns freely had access to chicken, sausage, and seafood, and they both have their own style of gumbo for both.

    basically, creole is new orleans city cooking, and cajun cooking comes from acadiana. they are hard to tell a part by visitors but to us they are very different.

  • OOOOHHHH! She is wrong! There are both seafood and chicken gumbos in both Cajun and Creole gumbo. The difference is Creole gumbo has tomatoes and Cajun don't and Cajun uses dark roux and Creole gumbo uses lighter roux(the color of a penny) Creole roux uses butter and Cajun roux uses oil. Those are the differences. Oh, and yeah the word gumbo is African but everybody contributed to this stew, i.e. French, Spanish, Native Americans...I come from 10 generations strong of gumbo cooks in Louisiana.
