    do you peel the tomatoes before you add them? i never have a clue about this

  • @juirtle : Depends on the variety of potatoes, here we used the red potatoes and we could have kept the skin but chose to remove it as most South Asian cooking calls for that.

    On a personal note: if the skin is very thin, we sometimes leave them on.

  • I downloaded your recipe from your website yesterday, and I cooked this up last night. I think that it requires less coriander powder. Also, I left the potato skins on. Finally, perhaps my idea (where we cook the potatoes with the tomatoes together with the already-sauteed onions) is a good idea. After the potatoes/tomatoes are done, then add the cauliflower and other ingredients. Just my Rs.2.

    I agree 100% about cooking the garlic/ginger very quickly.

    1. At 5:15, you add the tomatoes, with its very high moisture content. Now, suppose that you did *NOT* microwave the potatoes and cauliflower, and that, instead, you added the potatoes and cauliflower with the tomatoes to the cooked onions. What do you think of this idea? It would have further simplified the cooking because extra steps are eliminated and fewer dirty dishes are there.

    3. Finally, Can lemon juice be used instead of amchoor?

  • You can definitely skip the microwave part and make the entire dish on the stove as you mention. Microwaving is a bit faster as your veggies are cooking at the same time as your onions/tomato base (which takes quite a bit of time).

    Yes, you can substitute lemon juice for amchoor. The flavor will be slightly different, but bottom line, you will get the tartness.

  • Also, I love that you used microwaves. We desis need not be anti-technology.

    Finally, this appears to be easy.

    I love the fact that:

    1. A minimum of utensils were used to make this masterpiece.

    2. The ingredients, except for hing, are frequently used in a kitchen, and are not thinly-used/specialty spices, such as ajwain. Some cooks tend to use "1/8 teaspoon" of some weird spice. But the truth is, nobody can percieve this small amount. So the cook has over-complicated the recipe.

  • We do this only because cooking time varies depending on the heat/power setting of your stove (or microwave) and the type of cookware you are using.

  • Interesting. I am an old style Pakistani cook and i would never think to use the microwave. I might try it. I love aloo gobi served with only a very good raita.

  • It will be available in a small bottle/pkcket. And it is used only a pinch at a time to help in digestion.

    If you really can't find it, skip it, it will not alter the taste a whole lot.

  • Mango powder (aka amchoor/amchur) is a powder made from raw mangoes. It is available in most Indian grocery stores. The flavor is tangy or sour but not very citrus like. If you don't find it, you could substitute lime/lemon juice.

  • hi i have a question unrelated to the video: last night i cooked diced chicken in a tomato sauce, the sauce was on a low simmer, yet still the chicken came out tough and leathery...is it because of the tomatoes? if i cook chicken this way in a different kind of sauce it is ok, please help!

  • Yes, the acid from the tomato will toughen it, especially breast meat...sometimes, pan-searing the chicken meat first can help seal in the juices...I'm not sure what recipe you are trying to make so it's hard to give specific advice.

  • This recipe style works on a lot of different vegetables and meats combination. The cooking times will vary depending on what vegetable you are using.

  • Your beautiful country of New Zealand has a very large Indian population so I am sure you will be able to find Amchur (Dry Mango Powder). Incase you can't find it, substitute with a little bit of Lemon/Lime juice.
