The viewer does not know about Willem ever sees the fox in reality, or whether it is his mind playing tricks on him.

In terms of the movie as a whole, I'm willing to bet I am on the same "intellectual wavelength" as you, and most other people who enjoyed it. However, I can see why this particular scene would be funny to people regardless of their intellect.

If you read about it on the IMDb, you'll see that quite a few people have commented on some unintentionally (darkly) humorous moments in the film, and they're all fans too and certainly not stupid by any means.

Lars Von Trier doesn't even understand the movie. By calling people idiots for interpreting the scene in a different way than you did you pretty much miss the point of the movie; that there really isn't a single point to it that the director wanted you to take in. It's not like The Dark Knight where it's clear Christopher Nolan wanted to comment on humanity and how we react to anarchy. There's a lot to be interpreted but no clear intent from the director.

I think the movie works best because I don't understand what's going on, and that sort of adds to the disturbing nature of the movie. If I knew why all of these thigns were happening then that would take away the confusion, and if you take away the confusion you could lose a huge chunk of the disturbing....-ness.

However, because the film is so ambiguous in what is going on, it's only fair that someone can take the film as whatever they like, and people can easily take the fox as comedy.
