fantastic idea. for years I cut the X, what a nighmare. Then a couple of years ago my son suggested using a nutcracker. that was a Godsend...but this knife technic I will try for sure. the nuts look like they come out so easy. even with the nutcracker it's tedious to take off the shells. I use chestnuts in my turkey stuffing @ Thanksgiving and I'm always looking for ways to make the task easier. Thank you John...
Here in Poland its not that common to eat chestnuts. Our "adventure" with these ends in elementary school where we used to build these tiny, small humanoids and hedgehog from chesnuts and thats pretty much about it.
PLEASE READ! okay, ive been looking this up everywhere so maybe someone can HELP! please.... i went to and Asian market and bought a bag of peeled chestnuts, but when i opened it the chestnuts are all wet, mushy, and a dark-ish brown. does this mean they are bad? or are they supposed to be that way? i dont see andy mold but thdy smell kinda weird n the bad doesnt say that they are stored in water. so if you can help me out thanks alot!!
I have tried for years making the cross, roasting the struggle to peel. all I got was pieces. Today I tried the chef's way and I was totally blown away. I ended up with a bowl full of whole chestnuts for the first time ever. THANK YOU, THANK YOU I am going to get more next time I go out.
i dont care what they say, acrost or across that was a very useful vid! thanks! Now I will hopefully have roasted chestnuts like the street vendors.*fingers crossed*
Could you possibly have said "acrost" one more time? Where did you learn that word? Thankfully you cook much better than you speak! LOL The word you MENT to say is: across. that's it, just across. no such word as acrost, nor acrosst not even acrossed. Ciao.
great video, first time doing roasted chestnuts. Thank you Chef for your wonderfully simple but concise instructions. Steaming at the last half is precisely what they do in Switzerland. thanks for the helpful info. I am looking forward to poping my chestnuts out fo the oven and enjoying a classic.
Defending dialect: the second syllable of the word "across" can also be pronounced 'krost . . . chiefly (and perfectly acceptable) dialect. Good dictionaries inform.
Excellent video. Precise, concise. Useful clarity for ears and eyes. No exotic tools or techniques.
Armed now with information and a free Sunday afternoon to roast chestnuts. Less than a week before the shortest daylight hours of the year, and we'll have roasted chestnuts to celebrate longer days to come.
I spent hours looking around online for a good guide for roasting chesnuts and then I heard the sultry tone of Chef John and knew this was the guide to stick with.
I followed the steps to the t but none of the nuts came out clean. The flesh gets so soft that that it broke into pieces when you try to get it out of the shell. Moreover, the skin is stuck to the flesh unless you peel them off. Don't think this helps at all.
Always wanted to learn the correct way to cook chestnuts. I used to boil it for 30 min, or i'd bake it to death for an hour which they sometimes burst. I love chestnuts but I often just buy them and let it sit on the counter or frig til they rot cuz of my fear of cooking them. Thank you for teaching us. Great clear info!
People, this procedure works splendidly. This is the best way I've ever had chestnuts. I've tried freezing chestnuts before roasting, making the X before roasting, I've tried roasting at different temperatures but this new technique I've tried & it works. The only caveat I have is that the chestnut should be peeled before it becomes completely cool because the inner coat that covers the nut would be difficult to remove. However, using this method is still easier than the previous methods. Thx
wooooow, i watched this video right after i cutted the chestnuts and put them in the oven....now you tell me to use a bread knife after i nearly killed myself with a paring knife -__-
@jct200 Fuck hahah you gotta be careful! So many times have I slipped cutting chestnuts. Also.. steak knives work just as well as bread knives but are smaller/easier to handle :)
