@themaxxfan Actually, Alton's mother shows up in "Behind the Bird". Amusingly enough, the GE book "The Early Years" reveals that John "Elton" Herina is now in high school, plays football, and is taller than Alton, so odds are he won't be coming back.
He never says there's anything wrong with soft breads. he just advises against buying that bread shaped carbord that many a baby bommer grew up with. Speaking for myself, I can say that stuff has no taste at all.
And see, that just comes off to me as culinary arrogance. Some of us happen to like our "bread shaped cardboard". Everyone is entitled to their opinion, of course, but the suggestion that there's a right and wrong option in these situations is tantamount to enforcing that opinion. There's a lot to be said for personal taste, and I think it's easy to lose sight of that and give in to gastronomical elitism.
You can call it Elitism if you like but I grew up with my mom making bread from scratch and I will tell you this much. Normal run of the mill white bread tastes absolutely empty. And for making most good sandwiches, it is just too soft to hold much more then peanut butter and jelly/jam.
I had homemade bread too, most of what I ate growing up (and still eat) was homemade. My Mum knows how to cook and budget,so I got really good food for cheap.
It doesn't even need to be bread from scratch. Just baking one of those frozen loaves you can get at the store is like a thousand times better than that pre-sliced crap.
Have mercy on the guy. Some people are raised on pre-sliced bread and acquire the taste. And the feeling of home and nostalgia they get when eating what they have all their life tends to sometimes block out the desire for new culinary experiences, or it may blind them to just how crappy what they eat really is.

I've bought ramen before but only for the noodles. The seasoning in the packet just has too much sodium for me to justifiably eat. With as much as I use salt in my cooking, processed foods are pretty much way too salty to even think about using or eating.
@FrostbittenWolf There is NOTHING wrong with Ramen. I agree with ya though. I feel so sorry for people who live off of T.V. dinners and all that pre processed bullshit. Theres not a thing in the world better than smiling faces and a home cooked meal!
Fortunatly sandwiches are awesome to teach our next generation & There are new rules as to how Schools Should Provide Sustances and Not Delhi.....Deli! Lol!
Sandwiches are beautiful, sandwiches are fine. I like sandwiches, I eat them all the time. I eat them for my supper, and I eat them for my lunch, if I had a hundred sandwiches I'd eat them all at once! ^^Hehe, yey for the sandwich episode!!
Number one way to tell if Alton Brown has been to your local grocery store: some of the produce has been opened/squished/cut/ect.
