It's really personal preference. I actually prefer the Extended, it has WAY MORE features. I bought the LE since it has both versions of the movies. I figured it would also have the 4 film commentaries that are on the Extended Editions, but no. BUT, the LE Behind The Scenes features are pretty much never-before-seen. Basically, the Extended Edition features are more in-depth & there are more of them. All you get with the Limited Edition are the 2 versions of the movies & 1 feature per movie.
