Made this dish and luckily (from other research) I knew to let it "rest" after cooking. I let a 2.3 pound roast rest for 10 minutes and I should have let it rest for about 15 and maybe as much as 20. Still, it was juicy and tender. I can't say that the spices, glaze or bacon necessarily added that much. On the other hand, I've not made one before WITHOUT the spices, so take that with a grain of salt. Anyway, easy, tasty and filling. And the roast was 7.99/lb and would feed about 3 hungry people.

I just did this recipe. It was absolutely delicious. I did this with only a 1.61 pound tenderloin. Took me a total of about 40 minutes including the post glaze roasting. Took it out when it was exactly at 160 F in the middle. So tender you could cut it with a fork (literally) and the flavor was just amazing.
I think they don't give specific amounts for the rub or glaze because it depends on the size of the pork loin... to be fair, if you can't use your own initiative and work it out then you shouldn't really be cooking stuff like this, lololol.

Absolutely. Just use a meat thermometer to ensure proper cooking. You can also easily de-bone the pork loin by sliding your knife along the bones to remove.

Absolutely. Just use a meat thermometer to ensure proper cooking. You can also easily de-bone the pork loin by sliding your knife along the bones to remove.
