  • I think the key about this is determining a reasonable plate size. The plate size, in my opinion, is reasonable if at most 10% of the consumers of that plate are taking some of it home in a bag. More than that, and it's too high and should be lowered.

  • I do not go to restaurants that serve small portions.. or any other place where I know they are trying to nickle and dime on plate costs.

    People who will pay for small portions and like it represent a VERY small demographic of people who attend restaurants.

    I dont recommend his advice.

  • I think you folks are missing a very simple point here: The idea is to account for all costs and charge enough to pay costs and make profit. The guy who has the same costs and gives larger portions must charge more or depend on increased volume. With bigger portions, he goes under quicker if the place isn't profitable! The point of this video is that most restaurant owners don't do this simple math and don't even know it they are losing money on every single diner.

  • My point said nothing about a bag of food or lesser quality. Nowhere else but California can succeed serving a tiny little chunk of fish with a big fancy painted plate. The average consumer looks for value all the way around. One must beat the value down the block or die. That is my point.

  • You didn't speak to flavours, taste, service. If the lesser one tastes amazing, the waitstaff is on the mark, attentive and makes me feel welcome, I'm back for the smaller portion.

    Walking out with a bag full of food doesn't inspire me to come back.

  • Two nice fish dinners; One costs me 15 with plenty and the other costs me 15 with less. Where will I go? Did it occur to you that the larger portions may be key to success? The portion is as important as the quality, except in California.

  • That is why you are fat. Give me quality over quantity any day. You probably think a buffet is good deal.

  • Think about anyone you ever witnessed spouting insults from a distance. Every single one without exception was a gutless little nancy. Every single one, and now you too. You missed the point. Read high school level and try again.

  • If quality is equal I must agree with you. Less is a ripoff for the suckers who are duped by chic glitz.
