I praise you guys for your honesty about what you do/don't know about recording and such. Experimentation is what brings out new dimensions in recordings and makes inovators such as yourselves. It sounds like you're on your way to a great album. I will say, however, that I had a very difficult time understanding your engineer when he was turned away from the camera. However, kudos and good luck to ya.
