Guys, it's not necessary that the seed part is wasted. It depends on the kind of preparation. This video is in case you need the cubes - may be just for garnishing. You are not that much bothered about the flavor here. You can use the center part with all that seeds and juice in another preparation where you need the flavor.
This is a BIG WASTE. I would say that you should not discard the center. Rather, you should use it IN whatever dish you are preparing. The diced bits are really for nothing more than a garnish.
I thought the same too, I like the natural juice from the tomato it gives it that special flavor to my cooking although I have noticed that professional cooks follow that same method-excluding the 'seed ball'.

The gel around the seeds is the most flavorful part of the tomato and you're throwing it away! When we make picante here in Texas, we keep the seeds!
