U just gotta take a spoonful, taste it... and thats it... u wanna hog on it, do it after the cameras are turned off....

  • I do not know where to add the tips out of my cooking experiance. So I am adding here. When the Cooking stove is new and of high quality,The oven light is too powerful.so if we keep it on for fermenting the batter it gets too much warm almost hot... so Put some puts full of water beside the batter to be fermented or the lentils kept for sprouting..with the oven light on. It will ferment well, you will get long sprouts.

  • i like your talking and the strain you are taking to make us understand the way of cooking ,thanking you, thanking you very much, but pl i can't understand about the cream rice in idli making.

  • my batter did not swell up .. and the idlis were hard and dry .. i did exactly as u said. 2 cups rice cream soaked. 1 cup urad dal soaked .. kept overnight. what i did wrong?

  • @jagdishpatel1983 - Cream of Rice is available in any Indian grocery store. If you dont get cream of rice just soak plain white rice (NOT basmati) for 4 - 6 hrs and grind it into a paste with urad dal. (Thats the traditional way of making it :) )

  • @jagdishpatel1983 - Cream of rice is available at any Indian grocery store. If you cant find it then soak 2 cups of rice in water for 4 - 6 hrs (Wash it 2 times before soaking) and grind it into a paste along with urad dal (Soaked) rest of the process is the same. (Traditionally soaked rice is used in making idli batter)

I want to make them in steel bowl, but I don't think they come out nice. Since the bowls don't have any holes to spread the steam evenly over the mixture!

  • Hi everyone and vahchef,

can anybody please let me know that what is cream of rice? I am so confused. is there any that i can prepare this rice for Idly at home?

looking forward to read your reply.

    many thanks!

  • Cream of rice is a coarsely ground flour, just like sooji is to wheat. If you find his recipe confusing, you can try mine which I've successfully done for over 6 yrs...spongy, white guaranteed.

3 parts rice flour and 1 part udad flour, mix and blend with water to the right consistency, and then add a TINY pinch of bakers' yeast and ferment overnight. Add salt to taste, mix and make your idlis.

  • I'm sorry but what is he saying when I'm hearing "gun powder". I know he's not but it sounds like he's recommending that I eat them with gun powder.

  • LMAO

  • "Gun Powder" is the name of a blend of spices and lentils, etc. which are used as a table condiment in the southern states of India. Being a very dry powder mixture, gun powder is usually diluted with melted clarified butter(ghee).

  • More formally, we'd refer to it in Tamil as "Dosa Milakai Podi" (Not sure on the romanization there). The "milakai" refers to the dry chili peppers used in the mix, though prefixing with the "Dosa" signifies that it is specifically served with dosa or idli.

Also, although you can stir "gun powder" with just about any fat, the preferred choice for most people is actually sesame oil as the "nuttiness" tends to bring out the lentil flavor and also increase the apparent heat of the mixture.

  • what's cream of rice?

  • It's basically just coarsely ground rice meal. Some people also prefer to use rice flour which is extremely fine so that they get a very smooth batter. Ratios would be different if you used rice flour, of course (fine grind is more dense).

I like doing this as well, but I'd say it's more necessary for dosa as opposed to idli.

Traditionalists would just soak rice and grind it just like you do the urad dal, but that's really hard to do with a blender (stone grinders handle it, but not blenders)

  • Thank u very much!!!

  • ITS COARSE RICE POWDER

  • Let me explain as best as I can. In various parts of India you get idli rava. But there is a special rice -- for idli: called parboiled rice, looks tad bit transparent. Take 2 cups of this rice, wash well 3-4 times, then drain out water completely, and dry out the rice on a towel till it is bone dry. Then you run it in a grinder coarsely. What you now have is cream of rice. Once you do it you will never feel the inhibition. try with regular rice if no parboiled. Then follow his recipe in full.

  • thank u very much for takin the time to explain :))

  • u mean sooji or something else...i m a north indian so to understand this is a bit too tough

  • Ot looks wonderful, but I won't find the ingredients easily here!! :D

  • he was just wearing the chef uniform on top, underneath bare legs- see the reflection in the oven !!! lol :) vahchef vah!!! ;)

  • Hmm.. I think he is wearing south indian style LUNGI....

  • LMAO

  • Man he DEVOURED that stuff.

    This guy is so awesome.

  • oh but some party dishes

  • what is gunpowder?

  • gunpowder duh...

  • he's saying garam powder

  • No he's saying gun powder. It's a very hot spice mixture that he made in a early video a while back.

  • when will u teach how with sambhar

  • looks delicious , specially the bread.

  • I never suspected that you wore shorts during your videos. The reflective oven never lies. Haha! You are too funny with your steam train sounds.

  • LOL i noticed that his formal attire is only the orange suit. The bottom is probably casual or shorts haah =D

  • this dude is awesome and funny......your recipes are great too....

  • Sanjay... i live in a country where many of the ingredients you use are not found... especially the dhals... what do i do?

  • If you are living in US or UK u will get all these ingradiants in TESCO, ASDA(UK). or in WALMART(US). Just search these in world foods, Asian foods or in Indian Foods category. Its also available in Indian stores as well. For IDLY, unfortunately, u wont get the curvy bottmed dish in US or in UK(as far as I have searched).

  • wow never heard of cream of rice

  • You are a nut!! I'll always be a fan. Now, I have a question.

Is the process for washing the cream of rice the same as when we wash wheat flour for seitan? Do we wash it five or six times, or until the water runs clear?

  • Ive eaten this before and the Idli was really crunchy

  • idly is NEVER crunchy.

  • You are on a roll! Great short recipes that I have loved making almost as soon as you put them out on the web! Your marriage is certainly a positive influence on you, chef! Your humor is infectious, and your recipes are delicious! Keep it up!

  • I have been waiting for this recipe! Thanks so much!

  • Thanks, looks good.
