Cantonese is more tonal, while Mandarin is more mellifluous.
I understand both languages, due to my parents, so I'm not been bias.
If u don't believe it, try letting a non Asian person listen to the 2 dialects.
Another way to test is to imagine Teresa Teng's most famous song, The Moon Represents my Heart, sang in Cantonese.
