i would use white styrofoam, or fill the pot with oreo cookie crumbs mixed with a little buttercream icing, yeah it will probably get heavy , but it won't fall over and is edible.. i say no to the florist green foam too
Looks nice but once you pierce the cake with a foreign body, in this case a cocktail stick, it renders it inedible!!! The risk if cross contamination is for too high. There are so many other ways a cupcake bouquet can be put together without using sticks and foam.
