But most of them don't even consider this option, mainly because there is a death penalty on leaving Islam.

I think it's unnecessary, Israel never attacks other countries, only defends itself. A ground war with Iran cannot happen in this lifetime. Stay in your aircraft or on the ground in Israel. Even if a muslim country invaded, it could not help to paruchute anywhere. If Iran wants nukes there is nothing you can do. Surgical strikes and sanctions can help bu if they still persist, they will get them eventually unless you want WW3 to start and have 20 million casualties and it's not worth it.
