Actually Anberlin confessed to telling all those stories about the band name origin partly as a joke, and partly through not wanting to bore us.

The true origin of the bands name as confirmed by the band themselves was that, they were listening to "Everything in it's right place" by Radiohead and at 2:31 in the song, it sounds like the background vocals are saying "anberlin" and the band thought that that would make a good band name, and the rest is history.
