you don't even need an extension with safari. I know it works on macs, not sure about windows but just click window>activity> then open the list for the youtube page with the video you want to download and look for the largest file it has listed, usually about 5 to 10 MB

I recommend jdownloader. I've been using it for more than a year now and I have not had any problems. You just copy the URL from any page that's hosting a video, and it automatically adds it to the free program. It then checks to make sure that everything is okay to download and then you do so. Very clean interface, very user friendly, works with rapidshare, mediafire, megaupload, youtube and many, many sites.
