  • @Jemeela And both are British terms for what we Americans call a zucchini. Usually a Marrow is called a yellow zucchini or yellow squash depending on the store or region of the US.

  • whats the point with using a ragu pre made sauce. You lost me as soon as i saw that, I was looking for something inspiring that I may have missed when I make mine :( We can all chop veg and saute and add jarred sauce.

  • Poor Jemeela. Based on the commentary alone, this appears to be one of your less popular recipes. Even so, you never claimed it to be 'authentically' Italian, or 'cucina magic'.

    It's a simple and quickly prepared recipe using garden fresh vegetables and a store-bought sauce to save time for those in a hurry. That's -all- you called it, and that's exactly what it is. People need to take a step back and consider this point.

    My favorite part? 'Chop chop chop chop chop!'

  • What are you talking about? She didnt use any meat, that stuff that looks like meat is soy crumbles. And I dont think you have any choice but to use it frozen, so she says

  • nice cooking , we all cook very different dont we ,for example. i would have put a fresh chilli in there(sliced finely inc seeds) along with about 8 halved button mushrooms, and a teaspoon of italian mixed herbs and a sprinkle of woscetershire suace.also i would of added about 2 carlic cloves very finley sliced and chopped and a little grated ginger. would of half fried the mushrooms and added with bolognase,bit of salt into pot of pasta. cant stand pasta with no salt or butter added.

  • quorn is an expensive alternative for meat, in total theres about 3 types of meat substitute but quorn is just a brand name for fungus thats been specialy produce geneticly and flavours added and texture changed. its not mushroom at all its fungus but its not at all related to mushrooms. youll find that the cheaper store brands actually taste much better and full flavoured, quorn is very slushy and powdery and lacks flavour. my favourite is realeat mince available from tesco ,cheaper and better

  • I'm sorry i do not want to be rude but there are some very strange methods used in this video. I mean using ready made sauce is terrible and has nothing to do with cooking. I also think that adding the rest of the ready made sauce to the water for the spaghetti is insane. And no oil???? oil is very important for the taste. I am an italian and a vegetarian and i am horrified. At least do not call it bolognese. Please!!!!!

  • as you should know REAL bolognese does not have any tomato sauce in it... just tomato paste and stock and milk products...

    Bolognese sauce is made of minced meat, tomato sauce, onions and (optional) carrots and celery, and just a pinch of sugar (that's the secret)...

    the traditional spaghetti alla bolognese recipe from bologna italy which is a safe guarded recipe has absolutely NO sugar (many italians pride themselves on sweet tomatoes and shudder and the sight of americans using sugar to enhance tomatoes, which is why often enough they jar their tomatos during the best seasons so they can have these naturally sweet tomatos year round), NO tomato sauce, just ground meat, veggies (optional), tomato paste, stock and milk products

    maybe you were eating an italian american version, which many people mistake with real italian food unfortunatly, but if you do some research you will see otherwise. and its not called spaghetti alla bolognese, its more often refered to as ragu alla bolognese because italians refer to this sauce more as a ragu (generally used to describe sauces that arent just tomato based) as well, the sauce is often served with tagliatelle (a much thicker cut of pasta then spaghetti)

    I do apologize, i cant seem to find the authentic recipe but on his show emeril replicated that recipe (you'll see his note on the bottom of the recipe). if you would like to do a little more research then i you can find that they do have the ragu alla bolognese recipe safeguarded somewhere and written down in bologna

    please enjoy the REAL ragu alla bolognese, after doing some research

  • I think YOU should do some research! I know what I'm saying since I was born, and I live, very near from Bologna...If you ask any real housewife from Emilia, they will tell you that ragù (which also in Naples describe a tomato based sauce) is made from the ingredients I told you in my previous comment! I don't know where you live o where you got the recipe you're talking about, but I can tell you for sure that it's wrong....

  • Anyway you should already know (as you seem to know so much about the italian cusine), any family has its own recipe for ragù,but every recipe is based on minced meat and tomato sauce....and "spaghetti alla bolognese" means simply spaghetti with ragù, so it's a correct name for the dish! at least on one thing you're right, ragù is usually eaten with tagliatelle, bot it's also used for lasagne and some people eat it with pumpkin tortelloni...

  • Orange split lentils,are used in india food-like dal,or dhansaks-western dishies like lentil soup use them-they are often ridiculed as hippie food,but with rice(kichiri)they are a whole protein.

    Wash dried lentils at least 3 times-until the water runs clear-boil for 20-30 mins-add a veg stock cube/bay leaf if you want,then add to bolognese mix

    vegetarian cooking is easy and you never stop learning about food.check the web,for lentil, and tons of veg recipes.

  • There are NO variations for spaghetti alla bolognese, the ragù is always made by the housewives of Bologna only by using onion, minced meat and tomato sauce...someone adds also sliced carrots and celery but surely NOT zucchini and cucumber!! I'm sure they taste great but these are not spaghetti alla bolognese...

  • It may not be common,but it's wrong..since it is an Italian dish you must use ALLA!!The proper name for your dish should be "vegetarian spaghetti bolognese style"...Anyway in the pasta sauce you're using there can be some meat,since it's ragù(which is always made with meat) and not just tomato sauce,maybe the one you have in England is different but...watch out!!

    The most common term is Spaghetti Bolonese. Or sometimes just Spag Bol.

    Fish and Chips is suitable for vegetarians because they can eat fish and potatoes.

    I would be quite happy if another country called it by another name.

  • in england it is common to add things to spaghetti bolognaise. carrots, peas, sweetcorn, fruits, potatoes. it is seen as a common meal that everyone can cook, not a complicated ritual.

    You wanna change the recipe? Ok, you are free to change everything you want, but you must also change the name.

    The "Ragù alla Bolognese" it's a complicated ritual, and must be so, because this ritual have a peculiar history. Maybe for english people food are just something to fill the stomach, but for italian "la cucina" is a very complex stuff, involving memories, culture, ancestry, family traditions etc.

  • my version is more healthy and suitable for vegetarians. most people don't have time for rituals at the end of their busy day. there is no need to change the name. you should understand that the history of the dish also includes it coming over to other countries and being changed.

    One last thing try to make 2 vertical cuts before dicing the onion you will get much smaller pieces.

  • Homegrown vegetables are a lovely touch, but Ragu sauce? Check out the label, sugar is very high up on the ingredients list! I never thought about using courgette in my bolognese before, might try that, it's a nice idea. I usually use diced carrots and celery in it to make it stretch.
