Miracle noodles is not a recent invention. It has been around for decades in Asian culture and can be easily found in your Asian grocery store next to the tofu. The Japanese name for it is konnyaku shirataki. It is much more cheaper than buying "Miracle Noodles" which is what a caucasian man decided to call it and market it. It is often served in Japanese restaurants.
Just a suggestion: While handling uncooked chicken to wash your hands. I noticed in your video as you were adding the noodles and stirred the food you picked it up with your hands and put it back in the pan then licked your fingers... Kind of grossed me out.

I really don't think that mock chicken tastes anything like real chicken but if that floats your boat, go for it. If you want to do this vego I'd recommend using a nigari style tofu or even a tempeh.

Looks yummy; I'm gonna try it.
I just ate some miracle noodles for the first time with some homemade white clam sauce (plenty of olive oil and butter). They are very filling.
