@LeGuyIncognito it's really yummy. just skip the sugar sprinkling at the end and shape them into bite size balls, pour some melted chocolate, refrigerate till the chocolate sets and ENJOY!
I tried this and it didn't harden and I took it out of the fridge and heated 15 mins more, poured more pectin into the mixture and it still wouldn't harden. Anyone has any ideas as to why mine didn't harden?
@patwams48 Probably because of the peaches you used. I made some and it came out balanced between sweet and tangy. If the peaches in your area suck try canned peaches? Reduce sugar content too, of course.
@SuperBigD9 i don't create pain. all i ment was that i think a knife would be easier because you can get the straight line rather than odd wiggly lines you'd get with a pizza cutter. chill.

Has anyone tried this with other fruit and/or less sugar+ more Pektin?
Here in Germany, they sell grotesque overpriced bags of very firm, mildly sweetend miniature "all natural+ organic"-fruit-cubes(40 grams, a little more than 1 1/2 ounce) for about 4€/~5$ which totally isn't worth it, especially if you could make them yourself like these peachy ones
@W0tanTheGod Yeah, they're real nice made with strawberries and made with blackcurrants. Although with the strawberries, I had to put a little sugar when I put it in the blender, without it it was a little sour.
I am made it as a present for a friend, she was really happy. Thanks for the recipe, it is a very tasty treat to have. P.S. to all who say- ohhh sugar, it is a freaking candy, normal people eat once or twice a year or maybe one during tea time on sunday, if you really want it, and those who eat them all the time are just crazy, eat it rarely and enjoy this rare treat
Hello Chef Jhon, I am a big fan of your recipes...and my food wish is Pistachio Nougat...I love to treat myself with something sweet after lunch or dinner, especially in winters which are coming shortly..Pistachio Nougat...prety please :)
When I was growing up, my father had a candy shop in our basement, he made hard candy, this brings back memories for me. He didn't make gelee like this, but he made batches of candy, 30 - 35 lbs. batches, we had a marble slab that we poured the hot candy out onto after it was ready...our house smelled like a candy factory in the Winter...it was too hot to make it any other time of the year! Thanks Chef John...one John to the other!
@Poenut - We never had a shortage of candy around the Holidays, to top that off one of my father's aunt's, my Aunt Anna dipped chocolates, so she would want hard candy for her customers, so she would pay my father with chocolates for his hard candy...it was a wonderful time in my life.
One thing chef john which i think you ought to mention, while the gelee is cooling at room temperature, wash the pans IMMEDIATELY! If you leave it for a while bye bye saucepan!
@jakamneziak you could always fix the hardened/jellied sauce pan by filling with water and bringing back to a boil on the stove so that it would soften up again.
Humm this gave me a great idea. There all middle eatern sweets I love with rose flavor and pistachios I think after watching this I may be able to do something similar.
Chef John: what other fruit would you be able to substitute for peaches? Not that peaches are hard to get, you just didn't list any other options and it seems like it would be fine to use other stuff.
