I just got my Misono UX-10 150mm Petty Utility knife in the mail. During lunch hour, I am going to go get a couple of tomatoes at Albertson's. I want to perform this test. Of course, I realize the man in the video was testing a 240-270mm Gyuto, but I want to see if this will work with a 150mm petty knife also.
Remember a film called 'Bodyguard' anyone ? in that, the weight of a silk scarf falling down onto his Katana ?? was enough to slice the silk through. I wonder if that is true ? anyone know if it can be done ?
@reasoning777 with a traditional japanese knife? yerp. a western style japanese knife like this one is usually sharpened on both sides 15 degrees, meaning 30 degrees overall. traditional japanese knives are concave on one side, and only sharpened on one, making it about a 13 degree overall. sharpest. knives. ever. same way katana's are sharpened.
If you drop a tomato on a henckels it will cut it the same, the trick is to cut the tomato using the heft of the knife only, if you can effortlessly cut then the knife is sharp. I am sure this one can do it, its far more convincing (and one of the standard) test of sharpness.

@reasoning777 Actually on many knife forums, it has been agreed that cutting mere toilette paper is very difficult. Try it with any knife you have.

Not a convincing knife test. As stated above, to put the knife on something and let the weight of it slice through is pretty amazing.
