Why would you eat a defrosted durian, the freezing process takes away so much from the fresh fruit. Imagine putting these fruits into a freezer for 2 weeks, defrost it and then eating it - apples, oranges, pears...just about any fruit - how would it taste?

There are no lines don't let this fool trick you, You can cut it anywhere as long there is a hill looking shape then you can cut inside to get the fruit out and repeat. Im a big fan of durian but all my friends think it smells like shit. Each durian gives about 6-10 pieces of fruit.

easy to see if durian is ripe or not...

if it shown the lines like this videos ...its fully ripe...

when the lines splits a little by itself...its either fully ripe or at the most ripen stage (which a bland taste comes afterwards.)If the lines aren;t shown its either haven't ripe or u need to find the lines yourselves (depends on the smell)

just like some posters said..DO NOT freeze it...just put it in the refrigerator and eat it the next day

A ripe durian feels lighter and has the aroma oozing out.

Folks here (SE Asia) would take a durian and hold it close to the nose to sniff it, generally ,sweet sugary smell means ripe fruit. On the other hand overpowering, choking smoky smell means bad durian. No aroma normally means an unripe fruit which also feels heavier. Another way is to tap the durian with the handle of a knife, the sound of a ripe durian should sound like tapping on a damp cardboard.

@ronin35 I'd love to try durian, but you can't get it in the United States unless it has been frozen, which I understand ruins it. You need to get it when it is just ripe which is pretty much impossible if it has been shipped across the ocean. They cannot be grown in the US; they need a tropical climate. Some people have tried growing them in Florida, but they can't be very good.

@robert3302 Not really impossible, first remove the shell and vacuum pack the flesh (with seed) and have it couriered. That's what some of the durian sellers here do, and you can order it online too. This way the durian flesh retains its freshness. There is another durian product sold here called 'durian cake', it's made of almost 90% of durian pulp, it's not gluey, and has the consistency of cheese. That's the closest taste of durian you can get.

ALL durians do not have lines that were already cut open like the shown here. You need to find the lines from thed bottom of the fruit. And dude, you don't freeze the fruit. It changes the smell and teste.

I lived Bangkok for three years, eating a lot of durian and never noticed the line. The vendors always used a knife or machete to start it. The soggy texture of the normally stiffer shell and the ease of pulling it away with hands, no tools means it has changed through freezing. Of course, how much fresh durian do we get outside of Asia?
