FYI, for those who don't know who this guy is, he's the chef at Pizzarium, which makes some of the best pizza in Rome, and who provided my fiance and I with some of the greatest food memories of a trip that was chock full of them. Elizabeth, thanks for posting this, though it does make me a little sad that I can't have his pizza NOW.

Pelati tomatoes are canned, peeled San Marzano tomatoes. You can usually find them in any good import store.
