Could you possible make a video on how to make homemade fudge? I'm going to try it for the first time tonight and I'm so, so nervous about messing up. I was trying to look for some kind of video, but to no avail. *Sighs*
@Rx2D Sorry, can't get a video out in time! :) Don't be afraid to mess up. I made fudge over a dozen times before I got it right. Just have fun in the kitchen, and if it doesn't come out right, try again another day. A failed batch might taste delicious anyway, even if it's too hard or too gloopy. My kids loved the gloop!
@MuggleCooking - This is a horrible place to ask, I'm sure, but have you considered a DVD (or DVD series) containing how-to videos like this?There are just some things that work better with actual visuals. A friend and I were discussing how totally cool that would be. I for one would purchase it. And I know quite a few people who are currently using the book who would do the same.

So i was crying earlier due to school stress and the fact that its almost midnight and i saw this and decided to watch. It cheered me up soo much!!! I love how Harry Potter related things can do that for me :D
Use the zest and juice of one lemon. The pan does not need to be greased; the high proportion of fat in the dough will keep it from sticking to the pan.

Love how I can see one of the recipes before buying the book, but the instructions aren't complete. How much lemon juice and lemon zest did she add? Should the pan be greased since the dough is so sticky?
You made this look so easy! But I haaate working with sticky doughs! I always ruin them. This looks and sounds delicious though, so I might have to suffer through it =]
Muggle Cooking Instead of a food processor you can use a pastry blender, which costs about $10. Or you can make the dough the old-fashioned way, using your fingers to rub the fat into the flour. I prefer to keep my fingers out of it; the warmth of your hands can warm the butter, which needs to stay hard and cold for the best texture.
I just bought the book (*insert squee here*) so you can't imagine how awesome it is for someone with very little cooking/baking experience like me to be able to see how it's done. Thanks so much for this video! I really look forward to going through the book!

So, after you bake the tart for 10 minutes at 400, you change it to 375 for another 10 minutes?
