it looks great and i am sure its delicious but i think if you let it cook all together it taste better specially with tomato paste. i usually cook this khoresht in a deep pan and on the top my chicchen or meat I put the a layer of fried egg- plant so when it boils together the taste of the chicken and egg plant and sour grape is mix together.but as i want to keep the shape of the eggplant i put the eggplant on the top and almost at the 20 min to the end of my cooking.
