Only defenses I can think of against it is to kick the base leg (leg not kicking if it's on the ground), spinning with the kick and staying on the backside of opponent, blocking the kick (not recommended unless you want a sore wrist..depends on what block you do). Me personally, I'd block it while at the same time staying on the kicker's backside. That way, the kick can't follow me even if I move away from it so I'm making double sure I'm protected.

i sugjest stretching every day with your left leg, for every 1 time you stretch your right, stretch your left 2 times, then work on your basic kicks for balance, and work up from there

yes...you are right. you can fall if your other leg can't support your weight. however this does not usually happen as the head is not enough to stop the rotation of your whole body.
no, you cannot. your other leg will always support your weight, if you are good enough to execute the jumping reverse turning kick, you other leg will easily take the weight after having landing on it in countless other situations. trust me
