Yes, you have to keep sprinkling little water before making each tortillas. I haven't made tortillas with besan but you can make very thin pudas(dosa) and use it as a wrap...enjoy!

To make real corn tortillas you have to nixtamalize corn, pat it out into tortillas, and cook them over a comal. The Nixtamalization brings out the hidden vitamins and nutrients and is very essential to making real tortillas.
You might be able to use corn flour (not corn starch as they say in Britain) that is ground very finely, but I would not suggest it. Do not use corn meal.
I prefer fresh corn torillas, no corn flour; you boil the corn grains with a little lime until the "skin" comes out and then you take the corn to a "molino" and make fresh dough, but I understand this can't be made outside of Mexico and other countries. This seems like a nice alternative if I ever have to move out of my country, good work
Easy way is coming soon. These days, I add 2 tbsp of all purpose flour for 1 cup of corn flour and it makes great tortiall without any mash. You can just roll them very easily.

All purpose flour is just to make the masa easier to work with. And definately, a tortilla press would even eliminate the need to reshape the tortilla with anything, they come out ready to be put on the grill. Also, the majority of people don't use dry flour to apply it to the ball, they lightly wet their hands so that the masa doesn't stick to them, it's been done this way before the Spanish conquest. This takes practice, whichever way you decide to make them!
Your tips saved me!! I made my dough too loose and after I watched your video I realized all the things I did wrong. I should have watched you FIRST before I tried making tortillas. My tortillas tasted more like Indian style roti flatbread than any tortilla I've tried before. I used mostly the Mesa flour with 25% white flour and a touch of salt.
I think I made my dough too thick. I couldn't get the tortillas thin enough for my liking. I ate 4 or 5 and then 1 the next next day. My stomach felt irritated. Yesterday I didn't eat any and I felt fine. When I eat the Indian Rotis I don't get that feeling. Does the corn flower take a while to get use to? I've never had this problem with store purchased tortillas.
As I said, I don't add all purpose flour to my tortillas. It might be possible that not corn flour but all purpose flour might be making them heavier to digest. Next time, just add 1-2 tbsp of all purpose flour only, Just to work with corn flour easier. Were you dipping the Maseca dough balls into ordinary all-purpose flour before rolling them out, or was that just more Maseca? Haven't visited any latin/mexican store but would love to go and I will sure visit soon. But you can get at indian grocers the rolling pin like me. I was just dusting balls with all purpose flour to roll my tortilla. Dusting into flour makes easier to roll.
To make this corn tortilla, I use ready tortilla mix but you can use any fine corn flour not corn meal. Tortilla requiers ver fine flour almost like powder but not really powdery...
Small tip: one you put the tortilla on the griddle, on high heat, flip it right after 5 seconds, then let it cook on one side, flip and press with hand so that the tortilla fill with hot air, otherwise they don't look that good...and using a tortilla press makes it way faster...is good to buy one if you use it a lot like we do.

hi, i tried to make yogurt, second batch from the 1st ; i ate it, i got sick :-( it wasnt like yorgurt at all. i dont know what went wrong. the vessel was the same one i boiled it, kept it in oven as u advised. any idea ?

That's true about tortilla presses. They tend to make thick tortillas.
Commercial tortillas are rolled between two steel rollers with a lot of pressure and that makes them very thin.
To get thin tortillas at home, I have to roll them some after pressing them.
Using some pastry flour in the mix or adding a couple of teaspoons of cornstarch to the mix makes the dough easier to roll thin.

mmm i love corn tortillas, a little hint my great aunt taught me is to use the thin produce bags (the kind they give you at the supermarket for your fruits and vegetables), they stick the least.

Can I add salt and unsalted butter to the flour? Or will that ruin the mixture? It's just that it seems it would lack flavor without salt or something like butter to give it a good taste. What do u thinK? Great video! = D

Flour is ready to use with everything in it. But if you use corn flour only then add salt. But I use ready corn tortilla mix.

Great video, very informative. I like that rolling pin, can that be obtained in a Latin/Mexican food store? Were you dipping the Maseca dough balls into ordinary all-purpose flour before rolling them out, or was that just more Maseca? Can tortillas be made with ordinary corn meal that has been further ground down to a finer flour in a food processor?

Haven't visited any latin/mexican store but would love to go and I will sure visit soon. But you can get at indian grocers the rolling pin like me. I was just dusting balls with all purpose flour to roll my tortilla. Dusting into flour makes easier to roll.
To make this corn tortilla, I use ready tortilla mix but you can use any fine corn flour not corn meal. Tortilla requiers ver fine flour almost like powder but not really powdery...

Small tip: one you put the tortilla on the griddle, on high heat, flip it right after 5 seconds, then let it cook on one side, flip and press with hand so that the tortilla fill with hot air, otherwise they don't look that good...and using a tortilla press makes it way faster...is good to buy one if you use it a lot like we do.

Corn flour is like a Juwar flour but juwar flour is yellowish and corn flour is white or yellow. It's exactly made like juwar rotla but thinner than juwar rotla. Keep enjoying

hi, i tried to make yogurt, second batch from the 1st ; i ate it, i got sick :-( it wasnt like yorgurt at all. i dont know what went wrong. the vessel was the same one i boiled it, kept it in oven as u advised. any idea ?

I am surprised totally since I haven't heard anybody saying that they got sick after eating yogurt. How long do you keep the yogurt to culture? Also are you keep tracking of temprature? I think if it's problem for you, I recommend not to try anymore...good luck

I feel sorry that this recipe doesn't work for you. But when you have thermometer, make very small batch of yogurt..good luck. I have been making yogurt at home since years now, never had a problem. But always feel free to ask question.

Hey good job! You made these look simple and easy to make! As you mentioned a tortilla press makes the job much easier, but as a college student I am currently unable to afford one, so thought it was neat how you improvised and came up with a couple of alternatives :)
