Its a sign of respect to show the fresh crab. Basically it proves that it is the real deal and not packet crab!

@lawrencelugar7777 People pay a premium for live seafood. Some "live" seafood is almost dead. So some restaurant allows the customer to pick which one to get. Believe it or not, it makes a difference.
