  • Just add another layer of cheese and tortilla chips... throw some toppings in there. Put it back on some indirect heat. Then wrap that sum' bitch in some bacon. Cut into slices... cover it in some more cheese, then give it some more indirect heat. Don't forget to mop some homemade sauce on that bad boy. Slap it on a bun.

  • I see you using that bottle of hot sauce in a lot of different recipe's. What kind is it/ who makes it? Does anyone know?

Hey Boys (if ya catch) I kinda do similar to what you're doing here but what I do is to make my own special taco meat for taco night but with the meat that's left over I save it to put on nachos for Sunday football etc. Now granted and even I do a lot of Q'ing, this is all done in the kitchen. Another thing I do is to (instead of bagged chips etc.) is to deep fry my own corn tortillas..->

  • I have just eaten this and it was guuuud! I added quite a bit of heat (chipotle and ancho chilles that I boiled and minced beforehand) but the simmering and cheese cancels out much of the heat. So if you want some real heat, you need to add habaneros just like in the video.

    The beer added great taste to the chili.

    It's cilantro. Fresh leaves from the coriander plant. I THINK it's simply known as coriander in the UK. Also, refried beans are (I use pinto beans) beans that have been cooked, drained, mashed a bit, and fried in a pan(that's how I make mine). NEVER use baked beans for nachos! I suppose nachos are tex-mex, as most mexican dishes don't use a lot of cheese.

    The salsa would be homemade or bottled. I prefer mine homemade and fresh. Hope this helps!

  • I made this last night for 5 people including myself. I used your recipe, but instead of doing layers i just made two lots of single layer nachos. It was fantastic the best nachos I have ever had in my life. My guests said that themselves they loved it.

    The reason i didnt do the multi layers is that I thought the chips on the lower layer would become soggy with the meat and the cheese on top. The amount of food this makes would be ideal for 10 adults. half fed 5.

  • @Brandon52231 Since everthing is already "cooked", only a moderate amount of heat is needed to melt the cheese layers. The refried beans would be better off pre-heated and loosened in a saucepan, and applied warm...just as the meat is. This will help melt the cheese piles inside.

  • Canned refried beans are nasty. Cumin is better off bought inexpensively as whole-seed and powdered fresh and fragrant using a coffee grinder.

    But, all in all, I learn so much from the BBQ Pit Boys!

  • This looks good, but one if the inherent problems with making a giant platter of multi-layered nachos is that there isn't an even distribution of the awesome toppings. By the time you reach the bottom of the pile the tomatoes, jalapeños, avocado and black olives are gone. It's way better to make single layers on individual plates or trays. That way every chip has it's topping and every topping has it's chip. Also when using bagged corn chips, it's good to go through and remove the broken tiny

  • Nice recipe, looks really good, and easy to make in big quantities for a big crowd.

    However, I don't really see why you would have to make this on the BBQ though. You just cook the chili in a pot on direct heat, and only in the end use indirect heat for a very short time to melt the cheese, without adding wood for smoke or extra flavour... Except for the fact that making everything on the BBQ outdoors is more awesome then in the kitchen, I don't really think BBQing this recipe adds much...

These Boyz teach the technique of open fire cooking. They remind us to slow down a bit in this fu*ked-up world. Take a break. Leave the bullshit behind. Hang with friends, throw some steaks on the fire, crank up some music, and knock back a few brewskies. Some get it, some don't. You best go back to your kitchen, dude!
